Instructions to make Veg. Quesadillas (Spinach & Cheese):
  1. Heat the freshly made tortillas on medium flame and cook them up to 5-10%.
  2. Chop the spinach into equal amounts. Mash about 10 pieces of garlic cloves.
  3. Take a nonstick pan and set the stove on medium heat. Then add a tablespoon of extra virgin olive oil and then add 15-20g of butter of your choice.
  4. Add the chopped spinach and garlic to the pan and cook for 5 minutes and let it rest for 2 to 3 minutes.
  5. Add 100g of cheese sauce, 150g of mayonnaise and salt and pepper as per taste to the cooked spinach and mix well.
  6. Stuff the tortilla with a layer of grated cheddar and/or parmesan cheese on one side.
  7. For the next layer spread the spinach & cheese batter. Then on top add another layer of grated cheese. Fold the tortilla.
  8. Turn the gas on medium high and add 1/2 tablespoon of extra virgin olive oil and 1-2 cubes of butter to the pan. Place the stuffed & folded tortillas and cook for 2-3 minutes on both sides until golden brown and the cheese melts.
