- Wash the spinach well and divide it into two parts.
- Place the oil in a pot, finely chop your onions into it and sauté well, then add the spinach and let it until it is tender.
- Then add the water, the stock cube, the salt and the finely chopped dill and boil for 15 minutes.
- Follow by adding the rice, you might need to add a little extra water, stir and let it boil well stirring from time to time.
- As soon as it is done, place it in a baking tray, trying to keep it from having too much liquid, let it for a while so that you can beat the eggs and add them on top.
- Break the feta cheese into pieces with your hands and spread it over the eggs.
- Place in a preheated oven for 20 minutes.
A typical recipe includes long-grain rice and fresh spinach along with dill, cumin, salt, black pepper, red wine vinegar. Very tasty spanakorizo and different to the way I make it. My kids did miss the lemony flavour of mine but this was easily solved by squeezing a bit of fresh lemon.
