Dressed herring, colloquially known as herring under a fur coat (Russian: Селёдка под шубой, tr. selyodka pod shuboy or just Russian: Шуба, tr. shuba). I wanted to share my family's recipe for making German Herring Salad, known to our family as Herring Salat. This recipe is from my children's Grandmother, Gertrude Zemp.

The ingredients needed to make sig's herring salad:
- Make ready salted or mild pickled herrings
- Get peeled, cooked beetroot ,cooked until soft all the way through , finely chopped, set aside a tablespoon of the boiling juice
- Prepare carrot,cut into julienne, very fine strips, cooked until soft .
- Prepare mascarpone
- Make ready fine sugar
- Take balsamic vinegar (only use half a teaspoon or to taste if using pickled herring)
- Take each sea salt and fresh cracked black pepper, or to taste
Ready to make a Herring Salad dinner? Pickling herrings involves soaking (brining) herrings in a liquid with salt, sugar and spices. Lightly salted herring is a very popular traditional dish not only in Russia, but also in Holland, Sweden. Herring Salad is called in Russian cuisine "Herring in a Furcoat".
Instructions to make sig's herring salad:
- If the herring is very salty put in milk for half an hour to drain out some of the salt then chop into little equal sized pieces
- boil the beetroot and very fine julienned carrots in a little water with the sugar until soft ,
- cool down ,chop beetroot into tiny cubes.
- mix carrots and beetroot with balsamic vinegar, add a little sugar if not sweet enough
- mix with the mascarpone ,If not moist enough mix with some of the juice set aside.
- this makes 2 main meal salads or 4 starter salads.
- serve with peppery green salad leaves
Serve this salad in a glass bowl to show off the colorful layers. One of the most favorite foods, always present at our table - herring. There is no party in Germany that doesn't feature herring salad on the table. It's typical for Hamburg, where it's often served between. Creamed herring salad starts with pickled herring, a much-loved Eastern European treatment of this fish.
