Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt. This is my basic chili recipe though I have modified it with ideas found in other chili recipes. And I cook it all day in the crock pot.

- Chop onion and saute in a little bit of olive oil over medium high heat.
- Break up ground beef and add to pot. Use a spoon to break it up while it cooks. Cook until no longer pink, 5-7 minutes…
- Add beans, tomatoes, rotel, seasonings, corn and raise to high heat.
- Once you bring it to a boil, reduce to medium heat and cover for 50 minutes.

- Optional: top with shredded cheddar cheese. I serve it with either white rice or blue corn tortilla chips.
