Add the chicken broth and canned tomatoes with the juice. Reduce the heat to low and cook, stirring, until the pasta is tender and a sauce. Combine the ingredients for the Cajun seasoning in a small bowl. Place the cubed chicken in a bowl, pour the Cajun seasoning over top, and stir to coat the chicken in spices. When hot, add shallot, garlic and mushrooms.
